This is one the most simplest curry you can make. However, it is not a curry with gravy it is best served with pitta bread or a flatbread as a filling. Or evern in puff pastery!
6-7 peeled and diced potatos
1/2 a bag of chopped spinach
1/2 tsp of cumin seeds
2 tsp of corriander powder
1/2 tsp of chilli powder
1 tsp of tumeric
1 bay leaf
1 dried red chilli
1 tsp of mango powder
Salt to taste
1 table spoon of Olive oil
Heat the oil in a large pan
Add teh cumin, bayleaf and the dried red chilli
When it starts to sizzile and the potato and spinach
Add salt taste and the tumeric powder
Pour in 5 table spoon of water and cover it with a lid and cook for 10-15 mins until potoates are softened
Add the remaining spices and cook it for a further 4-5 mins
Squeeze some lemon juice and garnish it with fresh corriander leaves!
