1 big cucumber
400 gms of peas
300 mls of stock
1 clove of chopped garlic
1 peeled potato
Fresh Mint
1/2 pint of milk
Saute the onion, garlic and potatoes in some butter until soft ( not brown). Peel and dice the cucumber and add it to the mixture along with the peas. Pour in the stock and let it simmer until the potatoes are soft.
Once cooked grind the soup and add the milk and cook for 5 mins. Serve with some freshly chopped mint and bit of creme. Bliss!!
